OK so Canola has to be very heavily processed to make it edible. It has isothiocyanates that must be removed - ick. I use safflower oil, sesame, olive depending on the dish.

Even though I joke, I am not bad at baking. At Christmas I often decide to make some of my mother's old recipes. However I stopped a few years ago because most of the treats I think are not only unhealthy, they are dangerous. Example, one treat with oatmeal and coconut should sound healthy but it calls for things like, sugar, brown sugar, icing sugar, corn syrup and on and on. I think the name should be changed to Chocolate Diabetes Treats!

On another note, anyone notice that some treats are too expensive to make now? If it calls for nuts and dried fruits the cost quickly climbs.

"Ok" says Skinny as he bangs his head on the wall! I use safflower too and sunflower oil. Is there anything wrong with sunflower oil?

If a recipe calls for butter I will use coconut oil, grapeseed oil, avocado oil or olive oil. I can't have dairy. If a recipe calls for sugar I will use coconut sugar, maple syrup, honey or agave syrup.

Though that will work it will affect the texture of the finished product. We used olive oil once for a batch for chocolate cookies: they tasted good, but rose and dropped during baking. We giggled like little girls at the sight: we called them "four-skin cookies."

If they keep making more and more "fake" food it may cause people to look more seriously into using fresh products (if they can find them) to make their own salad dressings and things. The carbon tax will hit us hard, I think, because the companies that are taxed will all pass on the extra expense to us. We will pay for multiple carbon taxes with the things we buy, not just one. Sometimes I think our government has no idea how their decisions affect ordinary people.

Nothing wrong with it as far as I know. It's one of the good ones. I use it regularly, as well as olive oil in dishes that are cooked with low heat, or no heat (e.g. salad dressing).
I go to sunflower oil and coconut oil for dishes that call for higher heat cooking. And some things just aren't the same without butter, so I use that occasionally too (it can also take higher heat).
