Egg nog

Post by Robbie » Tue Dec 29, 2015 9:40 am

I'm not much of a chef but with all the eggs we have i decided to have a go at making our own egg nog. We usually buy the Kawartha Dairy egg nog (No other brand is worth drinking IMO! And light egg nog- what are they thinking??????? Why even bother then)

Tried this recipe: It's a raw egg one. I did adjust the ingredients a little. Came out just fine.

6 eggs
1/2 cup sugar ( I cut back, used 1/3 cup)
2 cups milk
1 cup heavy cream
(I Used 3 cups 10% cream instead of the above dairy)
1/2 cup rum (used 1/4 cup dark rum)

Separate eggs. Wisk yolks with sugar, then wisk in dairy. Then wisk in rum.
Beat the egg whites until firm but not too stiff. Blend in the egg whites to the egg yolk/rum mix.

We topped ours with a little nutmeg. We still found it too sweet so next time I'm cutting back the sugar even more. Very frothy and creamy!!! Yum.

Add more rum and leave the sugar alone. Might be just right!

Thanks Robbie.

I'm going to try with coconut milk...and ummmm I don't drink...,will be fine without Rum I assume? I have rum 'flavour' might be worth a dash or two. A lot of nutmeg and a cinnamon stick to swirl it with!!! YUM!!

The egg white whipped is a very interesting concept, can't wait to give it a go. Thanks for sharing

Robbie no stores in my area carry it  . The only reason I have had their ice cream is a little chocolate shop in Paris, ON also sell ice cream cones and it's the only ice cream that they carry.

I did a homemade egg nog this year too, but I did a "cooked" version to pasteurize it. It was fabulous and the family loved it!
