and of course bacon...
one problem I find with roasting Ameraucana cockerels, is that they are narrow and the breast dries out by the time the bird is done, this flat chicken recipe seems to solve that problem.
Cut the backbone out, flatten chicken
brush with olive oil and spices of choice
line pan with parchment paper
roast at 350 for 1 hour, cover bird with strips of bacon, finish roasting until done.
Flat chicken roasted on bed of herbs....
