I’m afraid of buying two because I don’t want them to have a friend in each other and then exclude my lonely hen lol. My thought process was, if buy one, they’d be forced to bond? Maybe that logic isn’t sound...

Your logic is sound. It will take a bit of time but your girl will bond with a single other hen. Looks like you have some good options in your area! Best of luck!

She will bond with another hen but only if you put both together in unfamiliar territory, then they tendvto stick together pretty well.
