A lot of the water in underground aquifers or deep in ancient rock is referred to as "fossil water" as the water settled there in ancient times. Surface water is very slow to flow underground to replenish aquifers this the danger of emptying waters such as the Ogalalla. The water can be dated from isotopes or something like that.
