There aren't any butchers around here that smoke for anything resembling a reasonable price. I do have some belly... I turn it into what I call "cheater bacon": brined in the fridge for a week with brown sugar and liquid smoke, and then into the oven on really low heat for a few hours to remove moisture. It's actually REALLY good!

god help us, @ross ..vegetarian maybe, hell, even MJ and I are eating less meat these days but vegan?..not in a million years...you ever read the ingredients list on some of that vegan crap?...talk about the industrial complex getting a grip...may as well chow down on Soylent Green..
