Well Gidday eh! My advice is to go and visit birdfolk and see their set up so you can learn what to do and not to do. KillerBunny is near Brockville and has Beltsville Small white turkeys so her place is a great start. Keep in mind her fencing and predator protection, as I read an article from a coyote researcher and there's 12 "packs" of coyotes in Prince Edward County (if I remember correctly from the tagging program).
Plan the barn and think of windbreaks and planting trees as you are in a "warm" area of the province. According to one fruit/veg dealer I know PEC has one month longer "frost free" growing season than us in Ottawa and good for heartnut type walnuts.
