The easiest for broth for me (i've had jars break in the freezer-usually when i reuse the mason jars) is to bag it. put it in freezer grade Ziplock bags (not the el cheapo sandwich bags). ladel it into the bags when it is cool, then lay the bags in a plastic bin, and freeze. in the bin IF they leak (never had any leak) the leak is contained until they're frozen. They freeze flat which means they stack nicely in the freezer. then when you want to thaw them out you can plunk the whole thing into the sink of hot water to thaw, or rip off the plastic and put the frozen slab into your pot.

we freeze things like ground deer the same way, flat in ziplocks. saves a TON of room in the freezer.

I pressure can the broth for 45 mins to an hour depending on the size of the jar. It is never in the pantry more than a few months. We go through quite a bit of it. Grab a jar, remove the lid, add a scoop of potato flour, replace the lid and shake. Dump into a pot and heat until thick. Instant gravy :)

does the oil freeze properly? i would expect it to go solid like a margarine.

my FIL brought a bottle of extra virgin olive oil in the glass jar out from his van in the middle of winter frozen solid. we were both very suprised. but either way once it thawd out Lizzie used it up.

I'm pretty sure olive oil freezes. When I read up on it today it doesn't change the molecular structure like high heat does. So that's a great way to freeze it.
So you take olive oil and the herb and mix in the blender or food grinder thingy and freeze. So you can have a huge variety. I'm excited!

But some things like mint I'll just use water to freeze it.

I wonder if a food dehydrator can be used to dry them up and jar for the winter season.

I dry my herbs in the microwave. Easy and takes literally seconds. Then scrunch up leaves and put in jars. I do parsley sage rosemary dill chamomile basil lemon balm oregano and thyme every year.
