I do! We do strips and cutlets but could be used to bread any shape.

I don't bread before freezing ...so I can not tell you how they'd do defrosted.

Mixed egg dip first.

For the herbs .. It's all in preference. Depending on the kiddies age they usually prefer less herbs. My guys are Italian so bring on the herbs.

Breading.
Equal parts bread crumbs
Equal parts AP flour
Dried Oregano
Dried Basil
Dried Rosemary
Paprika (small amount)
Sea Salt
Pepper
And depending on the recipe I am making I add fresh rind of one lemon.

Again, I haven't breaded and froze .. So I can't guarantee good Results when defrosted. Store bought often add things like citric acid (usually a GMO and/or imported from China) keeps the breading dry and crispy. Fresh is always better!!!
Maybe cut the nugget size and bread when defrosted? Just suggestions.

I use the same breading for pork schnitzel and fish, pretty universal :)

Should work great with Turkey too

Speaking of 9:30am I wonder if anyone makes chicken bacon. Not even sure how that could be done lol.

Chicken Breading:
3-5 chicken breast
salt and pepper
1 cup cornstarch
2 eggs, beaten
1/3 cup canola oil

Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper. Dip chicken into cornstarch and coat all the way and then into eggs. Heat oil in large skillet. Cook chicken until browned. Place in baking dish. 3 chicken breasts can be in a 9x9 but 5 chicken breasts fits better in a 9x13.

Sauce:
3/4 cups white sugar
4 Tablespoons ketchup
1/2 cup white distilled vinegar
1 Tablespoon soy sauce
1 teaspoon garlic salt

Whisk until smooth. Then pour evenly over chicken. Turn chicken so the sauce gets on both sides and then put in the oven at 350 degrees for 15 minutes. turn chicken and then cook for 15 more minutes.

The above recipe is absolutely Delish. Or just make the nuggets and use them where you like. Awesome

Sure, why not? Breakfast for dinner (eggs in quiche, for example), and dinner for breakfast. Sounds good to me.
