I posted my super simplified sourdough recipe...
So I figured I should post my favourite yeast Bread recipe....
1/3 cup olive oil
2-2/3 cup hot tap water
1 Tbsp yeast
6 cups AP Flour (plus about 1/2 cup)
1 Tbsp sea salt (not iodized)
Pour the 1/3 cup olive oil in your measuring cup and add hot water until you get to 3 cups.
put this in your mixer
Add the yeast and stir
in a separate bowl mix your 6cups flour and salt
add to the mixer
you may need to add an additional 1/2 cup of flour so the dough isn't ridiculously sticky
proof 1 hour on the counter
shape (makes 3 -19oz loaves) and proof another hour
Put a pan of hot water in the bottom of your oven before preheating
bake 400 for 20minutes, turn pans and bake another 20 minutes
Cool completely before cutting.

Whereas, I use a food processor with a dough blade.

I use a breadmaker

. I happened onto a really good deal from Bed Bath and Beyond (of all places). I only discovered much later that it didn't have the timer that it said it did, but that's ok.....

Since retiring, the bread we have been eating is exclusively homemade. In an old paperback book that I bought in the '70's, I found flour substitution amounts for all-purpose flour. From there I developed one of our favourite recipes to make, using my food processor. Here it is:
3 1/2 C all-purpose flour
3/4 C oatmeal (I use large flake)
3 C whole wheat flour
2 tsp salt
1 tbsp sugar
2 tsp instant yeast
large sprinkle of cinnamon (2-3 tsp?)
1/4 C oil
2+ C water (quantity that works)
- Mix dry ingredients and pour into processor bowl.
- With processor on, pour in oil, then slowly trickle in water until flour is mixed in and dough does not stick to sides. Remove from processor and knead a bit more by hand until dough is smooth. Form into a large ball an place in a lightly oiled, covered bowl (I use plastic wrap), let rise until doubled (~1 hr.). Punch down dough; divide in half and shape into loaves. Place in loaf pans. Cover pans (with same plastic wrap) and let rise to top of pan (~45 min.). Bake 35 mins. at 375 F.
Note: Mixed with the water, not exceeding the needed amount, I have also used whey from yogurt; pureed pumpkin or squash; or applesauce in this recipe.
