Red cabbage salads

For those of you who haven't noticed, I am very proud of my red cabbage ;)
harvested one little one to see if there is an actual cabbage in it, and indeed it is.
So here is my cabbage salad, carrots conveniently growing in the next bed.
First red cabage harvested, size S.jpg
Sliced red cabbage
scallion and a bit of apple cider vinegar
shredded carrot, salt and pepper

add mustard and mayo

Do you also eat the very core of the cabbage?

must say I haven't given it much thought, using it as a handle when slicing the cabbage

My mother had a Ukrainian/Polish word for the core that sounds like "cutchon" (accent on 2nd syllable). I'm not sure if that was a word for children or an actual word.

I must say I have considered it, but was afraid of the "aroma" that may result ;)

It's amazing, sweet without the bitter end taste, hope the large ones are the same.
totally different then the store bought.
of course the fact it was used about an hour after harvesting would have to make a difference too, can't imagine how long the veg spends on the store shelves
