sourdough bread from homemade starter

So since I wasn't going to be able to get my hands on any reasonably priced store bought yeast any time soon, I thought I would try to make my own sourdough starter and bake some bread with it. The starter took a while longer than average to be ready, because the kitchen is around 18C at best, but it did get there. Yesterday I prepared the dough and it did it's final proofing in the fridge overnight. This morning it went in the oven, and by lunchtime it was cool enough to slice into. I was pleased and relieved that it came out so well. Nice oven rise, just the right amount of sourdough tang, lots of little air holes, but none were so big that the butter would leak through onto the plate.

... and it is (delicious)! Not that we need to be eating a lot of bread, but it's good to know how to make it, if necessary. :-) DH LOVES it, but I have to ration it, seeing as he's diabetic (type2).
Aiden likes it too. Small sample, of course.

@Happy , @Killerbunny , I found the recipe for the bread online. Since I have a bread machine that's been collecting dust and taking up cupboard space, I figured why not give this recipe a go. I'm glad I did. :-) I used wholewheat bread flour.

My sourdough starter recipe is a combination of several people's methods. I adapted it so that there would be much less waste than the traditional ones where you're discarding cups of flour at a time for days. Flour isn't that cheap any more, or that easy to come by at the moment, so I pared the daily routine down to 3 TBSPs of starter from previous day, fed with 3 TBSPs flour and 2 TBSPs water, once a day. Same for maintenance if you're keeping it on the counter. Once a week if you're keeping it in the fridge. On the day before I planned to make the sourdough I kept all of the previous day's starter and fed 3 TBSPs flour and 2 TBSPs water first thing in the morning just to be sure that I would have 3/4 cup available for the bread recipe. Other days after using 3 TBSP of the starter, I discarded the leftover in the compost. I haven't tried giving it to the chickens yet. Maybe they'll like it too.
