Toffee apple pecan steamed pudding

Here is the link BUT DO NOT follow the toffee sauce part. for the toffee sauce use only about 125ml cream and temp it to 225F with a candy thermometer. I add the other half of the pecans to the pud mix. I used Empire apples but think any firm tart apple would do. I have a bad habit of not following recipes just using them to get the idea.
