I made this recipe today for the first time. I really like it. Instead of putting in 1/2 cup of raisins and 1/2 cup of coconut I put in 1 cup of flaked coconut. It's quite tasty and chewy. The icing is a thin layer.
From Company’s Coming 150 Delicious Squares
Cranberry Squares
Bottom Layer
1 ½ c all-purpose flour
½ c brown sugar, packed
½ c butter, softened
1/8 tsp salt
Second Layer
2 large eggs
1 c white sugar
¼ tsp salt
1/3 c all-purpose flour
1 tsp baking powder
½ c raisins, chopped a bit
½ c medium coconut
¾ c cranberry sauce, drained slightly
Icing
1 ½ c icing sugar
3 tbsp butter
1 ½ tbsp. water or milk
½ tsp vanilla
Bottom Layer
Measure all 4 ingredients into a large bowl. Mix until crumbly. Press in an ungreased 8x8 inch pan. Bake in 350 F oven for 10 minutes.
Second Layer
Beat eggs in the same bowl. Add the remaining ingredients. Mix well. Spread over the bottom layer. Bake in 350 F oven for 25 to 35 minutes until firm in the center.
Icing
Beat all 4 ingredients together in a small bowl, adding more liquid or icing sugar if needed for easy spreading. Spread over the cooled bars. Cut into 25 squares.
