I have been recipient of a happy beef tongue, from the lands of @windwalkingwolf
which makes me a very lucky cook indeed, so I thought I would do it justice by surrounding it by homegrown potatoes and Brussels sprouts, and topped with horseradish sauce.
It was absolutely delicious, so Thank you Jan and Gill !

I used to love jellied tongue in the UK but have never got around to doing it myself. Not sure how it was done.

One of the choice parts of the animal. Boil it. Let it cool. Peel it. Then slice it. A little salt and a honey mustard, my mothers home made bread, and it is absolutely wonderful. One of the absolute best sandwich meats there could be. Bee, deer, moose, elk, goat whatever. Tasty and mostly tender. I am now drooling like Pavlov's dogs.
Taco Tony's a mexican restaurant in Leamington does Vaca del Lengua tocos that are just wonderful. if you ever get that way.
