I was wondering why the recipe held no appeal to me - and I LOVE tomatoes. Turns out that it's the pasta. I really should make some Tabouli, except that all my cilantro has now gone to seed and the cuke beetles have done a number on my cucumbers, but I could cut out the chewed cuke bits and use some parsley.

Paste tomatoes don't usually have a lot of flavor, which is why a lot of people don't bother with them any more. It certainly is a lot easier to use ANY tomato in the sauce, and I try to grow only the tastiest varieties :).

Refined the recipe for 2, 2 large red tomatoes any king fully ripened or equivalent of smaller size, cored.
I now make it the night before, with fresh garlic and basil from the garden and few clumps of goat cheese, even for a person who actually doesn't like tomatoes that much, this makes for a very nice meal, paired with a nice Malbec ....fastest summer meal ever

:lol: sorry might have gotten carried away by the thought of the incredibly healthy food I am serving to DH and myself, Malbec being only second to Pino Noir as the healthiest red wines, for those adverse to reds, I also serve Lemon Balm fizzy water, also good for you ;)

I love the Trivento malbec and amazing value!
