Cranberry sauce
Did anyone see that cranberry recipe on tvo? From a cranberry farm. Have to put it down here or I will forget.
2 cups of cranberries.
2 cups of sugar.
2 cups of water.
Bring to a boil, stirring boil for ten minutes.
Sounds easy enough.

Pop in some orange juice instead of some of the water. Oh and use a little port too from the duck juices if you cook either duck, Muscovy or goose in a little port.

Skinny...yup..thats pretty well it...MJ just uses the directions on the bag of fresh cranberries...the idea of variations from Gill is tempting but boy oh boy do i like the fresh made cranberry sauce...it's so easy it's stupid...can't understand why people buy the canned stuff... :running-chicken:

Tom I didn't know it was that easy, I think I will try the basic recipe first before trying others. Seems like a lot of sugar to me but I guess it's probably bitter without it.
KB it's not Christmas until you hear that "slurp plop" of cranberry sauce sliding out of a can! Lol
I heard about adding a little lemon juice as well.

My Mum would add orange juice and some orange zest to give it a bit of extra flavour....

Skinny..it IS just that easy...depending on your taste you could cut back on the sugar a bit...the pectin in cranberries is high so it sets up pretty good...but they are tart as heck so hence the sugar.... :running-chicken:

I have made it with 1/3 less sugar and there is no bitterness. It's just a bit less sweet/ more tart. Which is what I prefer because I find it too sweet with the full amount called for.

I have never added water to my cranberry sauce. I just add the bag of cranberries and 2 cups of sugar with a splash of "real" lemon juice. Makes a very sweet and tart sauce. I think adding the water would make it very runny?
BTW - I think cranberry sauce is my favorite food at both Thanksgiving and Christmas
