Deviled eggs?

I love deviled eggs, but can never get the wonderful taste my mother used to. Anyone got any secret recipes they would share?

I just make mine by hard steaming the eggs, cut in half and scoop out the yellows into a bowl. For 6 eggs add 1 tsp yellow mustard, 2 tbsp mayonnaise and mix with the yellows. Then spoon back into the white and sprinkle with paprika.

Finely chopped fresh chives make a nice addition, cayenne pepper is also interesting for a bit more "attitude" ;)

I also put a little vinegar and sugar in mine plus the usual mayonnaise and mustard. Sorry I don't measure it I just make it to taste, sprinkle paprika on top.

Being a big pickle person I add a splash of dill pickle juice. Same as Kenya...can't say I measure. Also mayo, mustard and paprika on top. Sometimes I finely chop a dill pickle up and mix it in as well. Mmmm now I'm going to be thinking about deviled eggs all day...

The type of mayonnaise you use can affect the taste. Some are more creamy and some are more acidic, I find.

I can see doing that ,will try it some time, I also like dill pickle.

Asked my cousin if she knew mom's recipe. She said she added sweet pickle juice or bread and butter pickles juice.

My daughters mother inlaw made some one time when I was over there that were absolutely delicious. Her trick is to use dijon mustard instead of regular yellow mustard. and of course paprika sprinkled on top. Try it, it's a treat!

I use miracle whip or whipped dressing, I'm not overly fond of mayonnaise. Paprika on top, the fresher the better, and sometimes a dash of cumin and cayenne.
