I made 3 loaves. and its very good. Make sure after it cools tho, that you wrap it tightly in plastic, and let it sit for a day. Thats how banana bread gets that moist dense texture. Of course, you have to have that warm slice right out of the oven. I store it in the fridge... and warm it in the microwave some. It is moist surprizingly, and yummy. You could add butter I suppose if you wish. I myself love butter, and use it in baking mostly, (no margarine), but who needs the calories? NOT me, lol.

OK, this is from the don't do this department! :)
The main purpose to trying this, was to use up some walnuts past their prime,
turned out there was only 1& 1/2 bananas available, so given the shortage of bananas and plenty of eggs, put in an extra egg,
which made it more of an egg bread then a banana bread.
Will definitely try it again with the right number of bananas.
Since BF mentioned lack of color I aded some cinnamon sugar.
DH had it with peach jam and liked it, and I put on some butter, which pretty much defeated the purpose. :)

Low sugar (no butter) banana bread

As a general rules I make banana bread with butter and slather butter on it as well. But now I'm craving banana bread and I'm low on butter, so I'm going to try this recipe this evening. I've got overripe bananas in the freezer calling my name ☺ Chocolate chips are definitely going in there. Calorically dense foods are my friend.

Thanks! Always looking for low sugar recipes. I have been replacing reg flour with chickpea flour for even greater health
