Well, it was ... a yummy dinner. Hubs went back for seconds.
1tsp or so sunflower oil
1 lb ground beef
1-2 diced onions
1 - 2 lbs of tomatoes (I threw in about 8 frozen Roma tomatoes)
1 quart of sauerkraut
1 cup of long grain brown rice
2 cups of water
1 mushroom bouillon cube
1 dried chili pepper
4 bay leaves
pepper to taste
Heat sunflower oil in fry pan on medium heat, add the onions and saute until translucent (about 3-5 minutes), add the meat to brown, then throw all ingredients into crock pot and cook on high for 2 hours.
ETA: Thanks to Maximus and Shnookie for the inspiration!
