For making Candy.... you have to heat it past the stage for when the syrup is ready. I can't remember off the top of my head.... we use a candy thermometer... then when it reaches that stage.. you take it off and beat it with a wooden spoon.
Be very careful tho... it starts to set up... and when it does, you will know you've gone too far in your beating... because it will be VERY hard to pour into the moulds and it will set instantly. It will just act like lava... when it cools.. and sets coming out of the pot, lol.
I also suggest a stainless steel pot... and a shallower one, than a deeper one.

it's official I hate sap season.
A ratio of 40:1 has no place in my life. Who has the patience and time for this?
I might even hate the sap so bad I'll hold a grudge against maple syrup. Nature can keep their sap!

Make sap tea sandy, it will help. Just scoop some hot sap into a travel mug and add a tea bag of your choice, sit and relax and watch the fire.....it takes hours. Been there done that.

Some of the nicest times I have spent with my hubby have been chatting and sipping sap tea in the sugar shack when its nice and still at night just watching sap boil down.

Never tried the sap tea...might just have to try it...once evening comes and im on the last batch i generally have a nice glass of Merlot or two... :running-chicken:
