I forgot to update my results here. In short they were not very good! Would not recommend .
I feel like the low temp was too low but the med temp was too high. Several green/red seeds sprouted out of a dozen...zero jalapeño seeds sprouted and I ended up binning them and starting fresh just in case they were crap seeds. All of my hot banana seeds sprouted within 12 days and zero cayenne seeds. I will go back to the heat mat next spring.

Other gardeners have had disappointing results as well. It seems that it's imperative to find out the actual temperature given out by the Instant Pot before using it. I think I'll stick to waiting a little longer for seeds to germinate in my house that is chilly overnight!

I actually just use my Hatcher set at 80° for germination. it sits mostly unused anyways. heck I didn't use it for birds in like 3 years but I was using it for germinating seeds all along. with the digital read out it's as simple as dialing it down. it's a homemade 2 drawer Hatcher documented on here somewhere.
