Sweet potato advice needed

So I want to know, should I nip my sweet potato vines? Should I let them take root? And I hear they can be eaten like a green. I have only been trying sweet potatoes the last few years. They didn't grow very well in Alberta.

let them ramble and root. everywhere they root along the stems they will form new tubers as they finish up. very important to not let them get frost though when they are finishing up. i cover mine if its just one night....and harvest before they get frosted as late as possible in the season.

Also, they're picky about being watered. They like it pretty dry, and if watered regularly like you would any other plant, you'll get fewer and smaller potatoes.
