Growing bananas in ontario

There's one old fella (Dusty) with a fruit/veg stand and his peaches are always better than the stores. He's in between Bayshore and Bells corners on the north side of Robertson road in Ottawa. I had a chat with him once and he pays a farmer to grow veggies for him and demands he use manure on the field and not purchased fertilizer as you can "taste the difference" with carrots and potatoes etc.

I find some store bought peaches , apples pears , tomatoes & of course green bananas are picked early & mature later in fridge or on counter

Tomatoes picked green could be put in an oxygen free environment (co2) and they quickly turn red.
Apples stored in an oxygen free environment (and chilled) can be kept for months past the normal shelf life: they stay hard but don't taste as good.
