Dehydrate questions?

Post by Maximus » Mon Sep 26, 2016 10:59 am

I have a bunch of onions ... Has anyone tried to dehydrate in their dehydrator?

What about sweet potatoes (or squash)? I buy silly expensive dehydrated sweet taters for chewing kongs (dogs) Now I'm thinking dehydrate them.

What about chicken? I also but dehydrated chicken at Costco for the kongs (you know puppies. Have to entertain them somehow.

Maybe I'll also make some beef jerky? Anyone have an awesome recipe?

Bread? I usually make my croutons and bread crumbs in the oven...anyone do in dehydrator?

Dehydrate questions?

onions take a long time unless they are chopped THIN....and do that outside, or your house will REEK for DAYS! LOL
if you slice sweet potatoes they'll dry nicely. i've never tried to dehydrate a whole one...um.....
yes, you can dehydrate meat - just make sure to wash the racks well afterwards, and the temp in a dehydrator will not kill bacteria. If you want to eat the dehydrated chicken etc yourself i would suggest smoking it or brining it first to make sure you kill any bacteria.

I have several jerky recipes.....we do deer jerky....i smoke mine first and then dehydrate in my dehydrator. house smells amazing after.

my favorite is a honey garlic maple smoked....
4 pounds of deer (or whatever) sliced thin. Marinade overnight in the fridge in 1/4cup worcestershire sauce, 1 cup honey, 4 cloves of garlic minced up, a splash of lemon juice (not too much, or use vinegar), 4 tbsp brown sugar and top up with warm water to cover the meat, salt and pepper (i use 1tsp of each)....stir completely and marinade overnight. Drain the next day and place meat on smoker racks and smoke 150F for 2 hours (or shorter if you like less smoke, or longer for more) over maple chips.
then put in dehydrator and run until jerky is dry but bendable without breaking (about 4-5 hours for me).
store in the fridge, or freezer because it doesn't have cure in it....if you use sodium nitrate cure i think it's 1tsp per 6 pounds of meat....

I also have another recipe for a super spicy one....use the same base recipe above double the garlic, forget the honey, add 1/2 cup maple syrup, 2 tbsp dried ground chili peppers (or 1 tbsp of cayenne or 2 tsp each of cayenne and hot pepper flakes) and double the worcestershire sauce, some white pepper and black pepper.....

simple teriyaki jerky is simply marinade in teriyaki bbq sauce LOL
