Artisanal Chicken Program

I was at a meeting this morning where innovation in agriculture was the main topic. One presentation was from a participant of the Artisanal Chicken Program implemented through the Chicken Farmers of Ontario. I thought it would be interesting to this crowd that there are ways now to raise 600 to 3000 chickens per year for select identified markets without having to have quota. Yes, it needs paperwork, applications and the like, but I am happy to see that there is an entrance into that business that will help people getting a start in Ag business.
Have a look here for more info:

I wonder what the "select artisanal markets" are?

The first thing I thought of was Asian cuisine. Silkies specifically.

Heritage breeds could be another specialty.

What you feed too.

Just guesses though. I should be sleeping. [emoji12]

If I remember from the info Ross put up on PSO, Silkies were on the list - a preference for their black meat.

In the US some people are trying to breed a larger fibromelanistic (black skin/meat) chicken to satisfy that market....... tricky to breed completely black though.

In the silkies case it's not bigger is better . The ones we have now are too big . The cultural market uses pcs & small birds .

Since this program is out has anyone had experience with the Artisanal Chicken program? Or knows of anyone who has ventured into the scary world of government red tape and big brother knowing way too much about what we are doing/hoping to do/trying to do? Guess I am way too much of a conspiracy theorist! But I hate telling the government anything. They take more, and I still am waiting for unfulfilled promises from decades of lies never mind the new promise that you know will never see the light of day after an election. :running-chicken: However I would like to be able to legally sell to others in a specialized niche market.
