if i have too many eggs they get hard boiled and mashed and fed back to the chickens. :-) dogs are always happy to help too. yep....spring can come....anytime now.

We had a frozen egg the other day. Guess it was laid super early in the morning and froze by 7:30 a.m. It was cracked, but clean, and the inner skin was still intact. So I washed it as I normally would, took the shell off and put it in a container and into the fridge. It got eaten today. Funny thing, though, the yolk was acting still a bit frozen when it was dropped into the frying pan.

I think there is some sort of reaction with the protein of the yolk which makes them almost grainy looking. I found that when I baked with them or scrambled.
