I just looked it up and Cabot Cheddar is owned by a cooperative of 100 dairy farmers. It doesn't sound as if it has changed hands.

I have to admit that I have occasionally found odd packs of their cheese that are on the mild side, but anything is better than the Kraft!

Farmboy sells quite a few nice cheeses from small producers though they can be pricey, these are made by smaller local companies not big ones....
Any cheese sold by large chain stores like Costco come from larger processors. The food safety requirements these companies demand is far greater than most small companies can afford. Some have a pared down programme for small producers but after paying to implement it, it is no guarantee that you will actually sell anything and when you do they demand lower pricing and can send unsold product back at your cost (they always order more than they need to keep shelves looking full).

A friend with a small cheese company in the States likes to say that the best thing to happen to your company is a contract with Walmart, the worst thing is a contract with Walmart....you’re damned if you do and damned if you don’t!

Sometimes the cheddars vary and depending on the person grading and the need to get product packaged quickly it might be younger and less flavourful than expected.

I find the KERRYGOLD (Ireland) reserve cheddar, very much like what good Canadian cheddar used to be.
first it was only carried by specialty cheese stores, which required inconvenient extra trips, then Farm Boy started to carry it, and now bless their little hearts, IGA carries it and it's $ 1 cheeper the Farm Boy.
It seems that cheese, just like any other food stuffs have become a hit and miss proposition, feel sorry for the next generation, who will not even remember what "real" food is supposed to taste like.

What new folk get will be “real” food taste to them . It’s just us “old fogeys ” who miss our “real” food . Kinda like first love as a teenager . 🤘
