:). Now I have to ask what is a steamed egg? I was thinking it was poached, but maybe it is boiled?

Some say that it is better to steam fresh eggs instead of submerging them in water to hard boil, so that the shell can come off easier. So steaming means cooking it above boiling water. Most people have a steamer insert for a pot, or a pot with holes in the bottom that nests atop another.

Oh thanks KimChick. I'd never heard that and I'd love to make easy-peel fresh boiled eggs!

I tried this because DH as been having trouble peeling eggs for his lunch bag. I didn't say anything but put some steamed ones in . It worked!

There are instructions in "Favorite recipes" in Hard boiled eggs.
I never do them any other way, since I learned this, Thanks PTO :)

Late one summer I bought four red sex links and a rooster, they were young the hens had started laying in spring and the guy didn't want to winter them. One hen often put out one of these tiny eggs but it usually had a tiny yolk, so I let a bantam hatch one with some regular eggs. The chick was small like a bantam chick but healthy, surprisingly by about four weeks of age I could hardly tell it apart from the other chicks, by the time they were two or three months there was no way to tell them apart.
My March/April chicks are laying teensy weensy green eggs, there is a market for everything lol, an Asian woman I work with wants to buy all the eggs I can supply, she uses them like quail eggs so the smaller the better.

My postmaster buys all of my extra eggs and delivers to his family in Toronto every other week. He is Korean and also loves the tiny OEGB eggs. His family is super excited that I have 7 young Bantams about to start laying lol.
