Does anyone have advice on using these things. I tried cooking them last year. I boiled them and the water changed to an un appetizing color. Any tips on dealing with that. At first they tasted wonderful, but they had a bitter after taste I didn't like. I have tons of these things growing here and I would like to make use of them so if anybody has suggestions I'd love to hear them.

Peal and cut in to thin slices, keep in bowl of cold water until ready to cook to keep from turning dark,
sauté in butter with garlic and any spices that you like they should have mild nutty flavor.
I harvest only in the fall, that year growth.
There should be no bitter flavor to them.
Some cookbooks recommend cooking them like potatoes, I find that produces and unattractive vegetable and awful lots of gas. ;)
