Not a comparison chart but very detailed information on many rare or unheard of poultry breeds worldwide. Parts of site like waterfowl, bovines etc. still under construction. I feed 15% broiler breeder ration that I get from Floradale feeds. Most of the larger mills carry some version of that.

You could switch the grower out for pullet developer. Most feed mills carry it. The protein level may be a little lower.
If they still get to roam outdoors then I would not be too concerned leaving as is.

If you don't care for the staining and end results there are yellow beets. We planted them this year for the first time and they seem to taste the same. My wife really prefers them now.
My favourite way is fresh boiled with plenty butter and salt or sweet pickled.
